Swedish Christmas Cookies - A Recipe To Make Pepparkakor-Chocolate Christmas Cookies

Christmas is a special time in Scandinavia and Sweden in particular. Tradition and Heritage are extremely important to Swedish culture and there are many traditions which are widely upheld. In most traditional Swedish homes, the smell of home baked foods and desserts fill the air at Christmas time. The Swedes really love to cook and for many, the holiday season and the Christmas Eve celebration is the highlight of their year.

Chocolate Christmas Cookies

One recipe, which is very popular in Sweden, is for a cookie called the Pepparkakor.

Pepparkakor, literally translated, means "pepper cookies" but I've yet to see a recipe that included any pepper. They are similar to the American gingersnap cookie but they are generally thinner, crisper and smoother in texture.

Many refer to this cookie as a "ginger thin" and they are commonly called "gingernuts" in the United Kingdom. Besides their great taste, pepparkakor cookies are used as Christmas decorations as well. They are frequently shaped like little men or women, pigs, hearts or goats. If left round, they are decorated with frosting to give them more character.

Using a drinking straw, you can create a small hole in the pepparkakor cookie prior to baking. After the cookie has cooled, tie the cookie to the Christmas tree with a beautiful white or red colored ribbon.

Swedish Christmas Cookies or Pepparkakor

Makes 2-3 dozen cookies (depending on shape/size)

Ingredients:

1/4 cup molasses

3/4 cup white sugar

3/4 cup packed brown sugar

8 ounces butter

2/3 cup water

2 teaspoons ground cinnamon

2 teaspoons ground ginger

1 teaspoon ground cloves

1 egg

1 tablespoon light (or dark) corn syrup

3 1/2 cups all-purpose flour

2 teaspoons baking soda

Preparation:

The dough should be well-chilled before baking. You can either start a day early and chill overnight, or start preparing 1-2 hours before the cookies will be needed.

In a heavy pot, combine the molasses, sugars, spices and water. Turn the heat up and bring the mixture to a boil while stirring frequently.

Add the butter to the mixture (in pads or chunks) and remove the pot from the heat. Continue stirring the mixture until the butter has melted and the mixture is uniform in consistency. Pour the hot mixture into a large mixing bowl. In another bowl, combine the flour, corn syrup, egg and baking soda and whisk until well-blended. Combine with the hot mixture and stir until the dough has formed. Place the dough on a lightly floured board and knead for 1-2 minutes. Wrap the dough in waxed paper and chill until the dough is firm (1-2 hours or overnight).

On a lightly floured board, roll the dough out to about 1/8 inch in thickness (the thinner, the crisper) and either cut into shapes or make round cookies about 2 inches in diameter. Put the cookies on a lightly greased cookie sheet.

Preheat the oven to 375 degrees F and bake for 8-10 minutes until they are golden brown. Remove the cookie sheet from the oven and place them on a wire rack to cool.

Back in college my volleyball team was in my hometown playing in a tournament. Mom was gracious enough to accept my request to host a team dinner at the house. Mom always says her goal is to prepare enough food to feed "Cox's Army." Maybe this is some secret service special detail that only a Mom would know about, because I don't remember reading about "Cox" in any of my history classes.

Mom made her menu and prepared the meal and believed she had the army covered. And she was right! The team was quite satisfied after dinner and the only dish the team left empty was the party potatoes! Mom was very proud to have more food than could be eaten! She certainly does not like anyone to leave the table hungry.

If a large family gathering is scheduled for Thanksgiving, the following recipe from my Mom's kitchen can add a very filling side dish to your table.

2 lb. bag hash brown potatoes

1 pt sour cream

2 cans cream of mushroom soup

1 can cream of potato soup

2 cups sharp cheddar cheese

Salt & pepper to taste

Mix and put in casserole dish.

Bake 40 minutes @ 350 degrees.

Optional:
Put some shredded cheese on top of casserole.

I've browsed the net looking for a chocolate recipe that would be the best, all-time, holiday chocolate recipe and after several hours of choosing from the many chocolate recipes, I finally settled for the one I feel most deserving to be hailed as, "The Best Holiday Chocolate Recipe" and it's the Chocolate cookies recipe. You can have chocolate cookies for Easter parties, Halloween, Thanksgiving Day, Christmas eve dinner, and even on New Year's Day! They are certainly an all-time favorite, from toddlers to teens to grown-ups.

Here is a simple but wonderful Chocolate Cookies recipe.

Ingredients:

2 cups of chocolate chips (choose semi-sweet chips)
2 tablespoons of butter
1/3 cups all-purpose flour
1/4 teaspoon of baking powder
1/4 teaspoon of salt
2 large eggs
5 tablespoons of brown sugar
1 teaspoons vanilla extract
1/2 cup of nuts, preferably walnuts, chopped

The first step in making this wonderful chocolate recipe is to preheat your chocolate cookie-making oven to 350F. Put in a cup of chocolate chips and the 2 tablespoons of butter in a microwave-proof container, preferably a transparent bowl, and heat it up until it melts. Mix the mixture well until it smoothens. After that, put the 1/3 cups of all-purpose flour, 1/4 teaspoon of baking powder and 1/4 teaspoon of salt in a mixing bowl and mix them together. Be careful when mixing as not to whisk the mixture too hard or you will waste some.

Using a kitchen mixer or just by hand, beat the 2 large eggs and when done, add in the 5 tablespoons of brown sugar and 1 teaspoon of vanilla extract and mix well. Add the melted chocolate chips mixture you've previous heated up in the oven bit by bit into the mixture of eggs, brown sugar and vanilla. Next add in the dry ingredients and don't forget to add as well the 1/2 cup of chopped nuts and the other cup of chocolate chips.

After mixing all the ingredients, you will have a dough. Take a scoop of the dough and place it onto a baking sheet at about 2 to 3 inches apart. If you want to make the dough firmer, refrigerated it for about an hour or more. Bake it for 10 to 15 minutes while rotating the cookie sheet every once in a while until your wonderful chocolate cookies are a little shiny and cool them completely on the baking sheets.

Cream of tartar is an age old ingredient, found in just about any Snickerdoodle recipe. The common household baker rarely knows what cream of tartar is, let alone has this acidic based salt in their spice cupboard. Suffice it to say you can still enjoy delicious Snickerdoodles even though you may not have any on hand. You may even find you like the end results better with a simple common substitution.

Cream of tartar is commonly used in conjunction with baking soda when making Snickerdoodle cookies. Baking soda is the leavening agent while cream of tartar has no leavening qualities at all. It is the acidic counterpart that allows the baking soda to react and not leave a bitter taste in the cookie after it is baked. Baking soda must always be used with an acid based food such as buttermilk, yogurt, fruits, and cream of tartar. A Snickerdoodle recipe usually calls for two parts cream of tartar to one part baking soda. However, in the absence of cream of tartar you can replace this two to one formula with baking powder.

Baking powder is also a leavening agent. It produces a gas during the baking process that raises the baked good in the oven. Baking powder makes a good substitution in this recipe because it is conveniently made of baking soda, cornstarch, and cream of tartar. If you have baking powder in your cupboard, then you have the cream of tartar necessary to make Snickerdoodles. 2/3 cup salted butter, softened

1/2 granulated sugar

Step 1: Preheat oven to 350 degrees F.

2 cups of regular granulated sugar
1/4 cup of water (some people use distilled water, but tap water is just fine
1/4 cup of freshly squeezed lemon juice (remove seeds).

Technicalities

A saucepan
A plastic container or jar
Dull knife
Cotton strips (cut out an old t-shirt)
Cooking thermometer.

Preparation

1 Combine all the ingredients in a saucepan.
2 Start with heating the mix up on low temperature, until the bubbles start showing up.
3 Using the thermometer, make sure the mix has reached 250F. When this happens, take it off and pour into the previously prepared container. Let the mix cool down.
4 Make sure the mix has cooled enough so it doesn't burn you.
5 Using the dull knife, spread the mix in the direction of hair growth.
6 Place the cotton strip, press with your fingers a bit and then pull in the direction opposite the hair growth.

To wash off, use warm water and soap, that will do it.

Homemade wax sugar waxing tips

Make sure the hairs are 1/4 inch or so long. If too short, you won't be able to pull them out.

This mix can be reused if you haven't used it all up the first time. Simply keep in the refrigerator and then reheat in the microwave when you want to use it.

Finally, to help pull out the hairs more easily, take a shower beforehand and use a body scrub to remove extra dead skin that sugar might adhere to.

How to Make It

Preheat oven to 350 degrees Fahrenheit and prepare a cake pan by greasing and flouring and then set aside until needed.

Using a large bowl and an electric mixer add the cake mix, chocolate pudding, oil, eggs, ¾ cup Kahlua and ½ cup cold coffee and then beat until thoroughly mixed and then beat for about 2 or 3 more minutes.

Pour this cake batter into the prepared cake pan and bake in oven for approximately 45 to 60 minutes depending on the size and type of cake pan you are using or until done. Check by using toothpick method to ensure the cake is done. After cake is done, allow for 20 to 30 minutes of cooling time. You will not frost this cake until it is completely cooled.

To prepare the Kahlua frosting you will cream the butter or margarine and then add the powdered sugar and cocoa and cream well. Keep beating this mixture as you slowly add the Kahlua and then the hot coffee. Beat until it is a smooth yet thick consistency for spreading over the cake.

Homemade Chocolate Truffles recipe

Ingredients:

16 oz dark chocolate

Chocolate

1 cup heavy cream

1 tbsp liquor (optional) (if using, coffee liquor goes absolutely well here)

Directions:

Break up the chocolate into small pieces.

Heat the cream just to the point of simmering. Watch it the whole time, since boiling cream can overflow the pot! remove from heat right away once it starts to simmer.

Stir in the chocolate and liquor, and keep stirring until the chocolate has melted completely. Let cool, then put in the refrigerator.

Check the consistency of the truffle aggregate after 5 hours in the refrigerator. You should be able to scoop it with a spoon and roll balls from it. If it's too soft (impossible to roll into balls), put it back in the refrigerator and check again after 1 hour.

Line the baking sheet with parchment paper. Once the truffle aggregate is the right consistency, use a spoon to put some of it on your hands, roll into balls and put the balls on the parchment paper.

Note: at this point, you can also roll the truffles in chocolate crumbs (to make chocolate crumbs, just grind an additional small chocolate bar in a food processor). This step is optional, I only do it when presentation is important, since the truffles in chocolate crumbs look more expertly done then plain truffles :)

Put the baking sheet with truffles in the freezer for at least 1 hour. After you remove them from the freezer, take the truffles off the parchment paper and put on a plate. Store the truffles in the refrigerator.

The Aztec believed that chocolate was salutary and they used it as a medicinal drink. In sixteenth century Spain, chocolate was determined a health food. I have found a amazing chocolate mocha formula in a book published in 2007. The book is authored by Camilla V. Saulsbury and is titled, "Enlightened Chocolate". I have taken her guidance and prepared the chocolate mocha blend in a blender in batches so we all the time seems to have some around. I highly advise that you do the same and be generous this Christmas season. Pass a warm chocolate mocha mug to all of your friends and family.

Chocolate Christmas Cookies

Christmas Chocolate Mocha

Makes 4 Servings

1/2 cup unsweetened cocoa powder (not Dutch process)

1/2 cup packed light brown sugar

2 1/2 tablespoons instant espresso or coffee powder

1 1/2 teaspoons vanilla

pinch of salt

4 cups 1% low-fat milk

1. In a large, heavy-bottomed saucepan, couple the cocoa powder, brown sugar, espresso powder, the vanilla, a pinch of salt, and water and heat the blend over low heat, whisking, until the cocoa powder is dissolved and the blend is a flat paste.

2. Gently add the milk. Heat the blend over Gently low heat, whisking, until it is hot, but do not let it boil.

3. Divide between 4 mugs and serve immediately.

White Chocolate Raspberry Cookie Recipe

Ingredients

4 ounces white baking bars or white chocolate baking squares, chopped.

4 ounces white baking bars or white chocolate baking squares, melted

1/2 cup butter, softened

1 cup granulated sugar

1 teaspoon baking soda

1/4 teaspoon salt

2 large eggs

2 3/4 cups all-purpose flour

Topping:

1/2 cup seedless raspberry jam

3 ounces white baking bars or white chocolate baking squares

1/2 teaspoon shortening

Hardware

Large bowl

2 x 1-quart saucepan

Cookie sheets

Mixer

Step 1: Preheat oven to 375 degrees F.

Step 2: Lightly grease a large cookie sheet.

Step 3: Coarsely chop 4 ounces of white baking bars; set aside.

Step 4: In a 1-quart saucepan, melt 4 ounces of white baking chocolate over low heat, stirring constantly; set aside to cool.

Step 5: In a large bowl, beat butter with an electric mixer set on medium-high speed for 30 seconds.

Step 6: Add sugar, baking soda, and salt. Beat until combined.

Step 7: Beat in eggs and melted baking bars until combined.

Step 8: Beat in as much flour as you can with mixer. Stir in remaining flour with spoon.

Step 9: Stir in chopped white chocolate baking bars.

Step 10: Drop dough by rounded teaspoons 2 inches apart onto prepared cookie sheets.

Step 11: Bake 7-9 minutes or until edges are lightly browned. Let cookie set for 1 minute before transferring to a cooling surface.

Topping:

Step 1 Just before serving, in a 1-quart saucepan melt jam over low heat. Spoon about 1/2 teaspoon of jam over each cookie.

Step 2: In another 1-quart saucepan, melt 3 ounces white baking chocolate squares and 1/2 teaspoon of shortening over low heat until smooth and creamy.

Step 3: Using the tines of a fork, drizzle white chocolate over cookies. Let stand until set.

Makes 48 cookies.

Ingredients

Chocolate Christmas Cookies

1/2 cup granulated sugar

3/4 cup salted butter, softened

1 egg yolk

2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1/4 cup unsweetened cocoa powder

Decorations:

Vanilla flavored candy coating, melted, slightly cooled

Decorator sugars and candies

Drumsticks:

Red licorice laces

Step 1: In a large bowl, combine sugar, butter, egg yolk and vanilla extract. Beat at medium speed with an electric mixer until creamy (2-3 minutes).

Step 2: Reduce speed to low and add the flour and cocoa; beat until well mixed.

Step 3: Divide dough into fourths. Shape each fourth into a 7-inch roll about 1-inch in diameter. Wrap each roll with plastic wrap and refrigerate for 1 hour.

Step 4: Preheat oven to 375 degrees F.

Step 5: Cut rolls into 3/4-inch slices with a sharp knife. Place rolls 1 inch apart, cut side down, on ungreased cookie sheets.

Step 6: Bake for 8-10 minutes or until set. Let cookies set for 2 minutes before transferring to a cooling surface. Cool completely.

Decorating:

Step 1: In a small microwave safe bowl, melt candy coating in microwave according to directions on package.

Step 2: Roll sides of drums in the melted candy coating. Immediately dip or roll in desired decorator sugars or candies. Let stand to harden.

Drumsticks:

Step 1: Cut licorice laces into 1 1/4-inch pieces.

Step 2: Dip one end of each piece into melted candy coating. Crisscross two drumsticks on top of each drum. Let stand to harden

Smore Bar Cookie Recipe

Ingredients

1/2 cup (1 stick) salted butter, softened

Christmas Cookies

3/4 cup granulated sugar

1 egg

1 teaspoon vanilla extract

1 1/3 cup all-purpose flour

3/4 cup graham cracker crumbs

1 teaspoon baking powder

1/4 teaspoon salt

5 milk chocolate bars (1.55 oz. each)

7 oz. jar marshmallow creme

Hardware

Whisk

Large bowl

Medium bowl

8x8 inch baking pan

Cooking Spray

Wax paper

Mixer

Step 1: Heat oven to 350 degrees F (177 degrees C).

Step 2: With cooking spray, coat 8x8 inch baking pan; set aside.

Step 3: In large bowl, beat butter and sugar until light and fluffy.

Step 4: Add egg and vanilla, beat well.

Step 5: Whisk together flour, graham cracker crumbs, baking powder, and salt.

Step 6: Add flour mixture to butter mixture, beating until blended.

Step 7: Press half of dough into prepared 8x8 inch baking pan.

Step 8: Arrange chocolate bars over first layer of dough.

Step 9: Spread marshmallow creme over chocolate bars.

Step 10: On wax paper, spread remaining dough into 8x8 inch square, carefully slide dough off wax paper over marshmallow layer. Carefully press to form layer.

Step 11: Bake 30-35 minutes or until lightly browned.

step 12: Cool completely in pan, cut into bars.

The Best Chocolate Chip Cookie Recipe Ever

Many people like to treat their families to home-baked goodies. As just about everyone knows, America's favorite cookie is the good old Chocolate Chip. Recipes and variations abound, and often families have their own versions of this most-loved sweet. What some people may not be aware of, though, is the origin of this cookie. The story goes that a Massachusetts innkeeper by the name of Ruth Wakefield accidentally invented the scrumptious diet-breaker. It seems Mrs. Wakefield was baking a batch of chocolate cookies in the kitchen of the Toll House Inn and substituted grated chocolate bits for melted chocolate. Apparently, Ruth was hoping that the chocolate bits would melt and mix into the batter as they baked. It seems she was wrong. Her mistake, however, became one of this country's all-time favorite treats.

There are many variations of the Chocolate Chip cookie. Some popular ones include:

Chocolate Christmas Cookies

* Replacing the typical walnuts in the recipe with macadamias; * Mixing different types of chips with the chocolate, such as butterscotch or peanut butter; * Adding dried fruits, like raisins or cranberries.

My clan prefers the solidly unpretentious, classic chocolate chip cookie. Following is the recipe for my family's favorite after-school snack, which is the classic Toll House version.

Chocolate Chip Cookies

2 sticks butter, softened 3/4 cup packed brown sugar, 3/4 cup white sugar, 2 large eggs, 1 tsp vanilla, 1 tsp baking soda, 1 tsp salt, 2 1/2 cups all purpose flour, 2 cups semi-sweet morsels, 1 cup chopped nuts

Preheat oven to 375 degrees

Combine flour, baking soda, and salt in a small bowl. Beat butter, granulated sugar, and brown sugar until creamy. Add the vanilla, and the eggs one at a time. Gradually beat in the flour mixture. Stir in the chocolate chips and nuts by hand.

Drop by rounded tablespoonfuls onto ungreased cookie sheets.

Bake for 9-11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

This recipe makes approximately 60 delicious cookies.

This dessert item is not only lower in fat and in calories, but it is very fast to prepare and fantastic to eat.

The ingredients required are as follows: 1-1/2 cup plain yogurt, 2 tbsp fat free milk, 10 marshmallows, 2 tbsp semisweet chocolate chips along with few assorted fresh fruits.

Take a strainer and line it with four layers of cheesecloth and put over a bowl. Put the yogurt in a prepared strainer, cover yogurt with edges of cheesecloth. Refrigerate for 8-10 hours.

Take a small pan and combine the milk, marshmallows and chocolate chips. Cook till chips are melted and you get a smooth mixture. Transfer it to another bowl and allow it to cool.

Remove yogurt from cheesecloth and discard the liquid from the bowl. Stir yogurt into milk mixture. Refrigerate till serving. It can be served with fruit.
